For the Greek Yogurt Chocolate Cake:

    1. Set oven temperature to 350º (F). Three 9-inch metal cake pans should be prepared by liberally buttering and flouring them, or by spritzing them with baking spray. Put aside.
    2. Place the flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer bowl or a big bowl. Use the paddle attachment to stir or whisk the flour mixture until well mixed. Put aside.
    3. Mix the milk, Greek yogurt, oil, eggs, yolks, butter, and vanilla well in a large dish. Mixing until just incorporated, gradually incorporate the wet components into the dry ingredients. Next, slowly mix the water OR the hot coffee into the cake mixture. Beat at a medium-low speed to blend ingredients evenly. It’s easy to overmix here, so take caution!
    4. Evenly divide the cake batter among the ready cake pans. A toothpick or cake tester put in the center should come out clean after baking for 25 to 28 minutes.
    5. Take the cakes out of the oven and let them cool for ten or so minutes before taking them out of the pan and letting them cool entirely on a wire rack.

In the meantime, make the Greek Yogurt Chocolate Frosting:

    1. To ensure there are no lumps or bumps, thoroughly whisk the cocoa powder and confectioners sugar before sifting them together.
    2. Creamy butter may be achieved in about two minutes by using a stand mixer or a handheld mixer with a paddle attachment. Turn the speed down to low and gradually add the sifted sugar/cocoa powder. Next, add the vanilla and salt, and alternate between adding Greek yogurt and half-and-half. After adding all of the ingredients, beat for at least a minute on high speed, or until the mixture is light and creamy.
    3. Cake layers should be frosted as desired.

    NOTES

*Half and half is a product that is half heavy cream and half milk that may be purchased in most dairy areas. If you can’t locate it, just whisk together half milk and half cream.
